Recipe: Sunday Power Salad

When I started making this salad on Sunday, I just wanted a combination of really healthy, good foods on my plate and ended up with this striking combo! I wasn’t sure what to call it at first but eventually decided on ‘Sunday Power Salad’ because it’s so chock-full of all the good stuff of a balanced diet – greens, protein, grains and even a dash of dairy in the form of Greek yogurt. I use the yogurt as a healthy substitute for sour cream for the spinach along with a squeeze of lemon.

I’ve been meaning to add tofu to my ingredients list for a long time as a source of yummy protein but the supermarkets I go to rarely   stock any decent looking tofu. I finally popped into a local oriental store and found these bags of pre-cooked brown tofu in the freezer section – perfect for a lazy girl like me who doesn’t want to go to the added trouble of pressing and cooking her own tofu!

Sunday Power Salad: (serves two)

Ingredients:

  • One 250gm pack of SunRice Heat and Eat Brown Rice & Quinoa Mix (If you don’t have this, just substitute with your own brown rice and quinoa or just add plain brown rice!)
  • One punnet of baby corn, washed and sliced into bite-sized pieces
  • Half a punnet of pre-sliced mushrooms
  • Six to eight pieces of pre-cooked firm tofu
  • A few handfuls of spinach leaves
  • Half an avocado, sliced
  • Soy sauce
  • Greek yogurt
  • Half a lemon, sliced

Directions:

Cook brown rice and quinoa mix according to directions. While the rice is cooking, heat a little oil in a pan and add the baby corn. Cook for a minute or so before adding the mushrooms, tofu and a dash of soy sauce. Sauté on medium heat until the vegetables are tender and cooked through before removing pan from heat.

Add the rice to serving bowls/plates as your base. Arrange the avocado slices, mushrooms, tofu and baby corn around the rice. Finally, wash, spin dry and chop up your spinach leaves and add to the plate with a dollop of Greek yogurt and a squeeze of lemon for taste. Serve and enjoy!

  1. Delicious recipe of salad. Finally i found some different style of making salad. Including with tofu.
