Recipe: Quinoa Rice Stir Fry Bowl

I adapted this off a recipe from Mel Chrisp of Healthy Ways Happy Days – check out her Instagram feed for amazing colourful pics of yummy healthy dishes! I always take a peep in there for inspiration whenever I’m at a loss as to what to make for dinner.

I’ve been meaning to try this SunRice Naturally Rice and Quinoa combo for a while so when Mel unveiled a veggie bowl featuring this very product, I knew I wanted to replicate her dish. I had bought the 750 gram bag and tried cooking one cup of quinoa rice in our rice cooker. It turned out well except for the fact that quinoa kind of went everywhere and was stuck to the upper sides and oozing out of the steam hole in the lid.

So I wasn’t looking forward to cooking my quinoa rice in the cooker again and was seriously thinking of cooking int in a saucepan on the stovetop when I reread Mel’s recipe and realised she had actually used the smaller two-serving sized pack where all you have to do is cut the corner off and pop it in the microwave. Easy-peasy! I didn’t even know there was a two-serving pack!

Quinoa Rice Stir FryBowl:

Ingredients:

  • Half a brown onion, diced
  • One bunch of broccolini, chopped
  • One capsicum, diced
  • One punnet of baby corn
  • One punnet of exotic mushrooms, washed and sliced (I used a mix of oyster, enoki and shiitake mushrooms but you can also just use any kind of ordinary brown or field mushrooms)
  • Two chicken breasts, washed and diced
  • Two tbpsns sesame oil
  • Tw0 tbspns soy sauce
  • A couple of dashes of oyster sauce
  • One pack of 250 gram Heat and Eat Rice and Quinoa (if this isn’t available, try cooking one cup of brown rice and quinoa on your stovetop or in the rice cooker! You might have to adjust individual cooking times for the rice and quinoa)

Directions:

Heat a little oil in a large pan. Add the onions and cook until fragrant.

Add the chicken and cook until chicken is thoroughly browned on the outsides. Add the broccolini mushrooms, baby corn and capsicum and cook for a few minutes. Stir in the soy sauce, sesame oil and oyster sauce.

While the veggies and chicken are cooking, snip the corner of your Heat and Eat Rice and Quinoa pack and microwave according to directions or cook up your own rice and quinoa combo.

When your vegetables are tender and chicken is cooked through thoroughly, stir through the quinoa rice.

Serve up and enjoy!
