Recipe: Pear and Peanut Butter Parfait

Today is sunny with high temps of 30 Celsius degrees predicted so it’s feeling like summer once more! The weather is perfect for sticking with my usual favourite breakfast parfaits – but this time, I’ve decided to change things up a little with some peanut butter and pear đŸ™‚ It made for an extra crunchy parfait today and the perfect fuel after a Kayla Itsines full body workout. 

My partner has a health condition that requires him to be extra careful of his sodium so we’re always on the lookout for packaged foods with less sodium and salt content. The other day he brought home this Kraft No Added Sugar or Salt Peanut Butter. It has about 5mg of sodium per serving and tastes just like ordinary peanut butter. Hooray!

As usual, I served my parfait in my new IKEA mason jar but if you don’t have one, just use a glass or a bowl. I promise it’ll taste just as good!

Pear and Peanut Butter Parfait

Ingredients:

  • One pear, washed and chopped into bite-sized pieces
  • Three strawberries, washed and halved
  • Two large scoops peanut butter (I used Kraft No Added Sugar or Salt Crunchy Peanut Butter)
  • Greek Yogurt
  • Honey
  • 2-3 handfuls of rolled oats
  • One handful sunflower seeds
  • One handful raisins

Directions:

Start with a base of rolled oats, sunflower seeds and raisins. Drizzle a little honey over the oat base.

Add a layer of Greek yogurt on top of this, followed by the two scoops of peanut butter. You might need to use two spoons to smooth out the sticky peanut butter over the yogurt.

Add your layer of strawberries (I only use three to save room for the pear). Finally, top off with the pear pieces.

Dig in and enjoy!
