Recipe: Easy Fried Rice

Good morning and happy Tuesday! Hope everyone is having a great start to the week 🙂 I know I am because I’ve been forcing myself to get up early and be super productive. It’s a product of a couple of my New Year resolutions, to stop procrastinating and to make the most out of everyday!

So far, it’s been going great. Making sure I get.shit.done has left me with plenty of time to do other things like make plans with my friends and hang out with the BF, things that I ordinarily would feel guilty about only because I’ve been procrastinating and not getting.shit.done! (is this going to be a catchphrase for me? getting.shit.done?)

By the way, has everyone been getting into the Golden Globes red carpet fashion like I have? The consensus amongst me and my workmates (total red carpet fashion aficionados – that’s how we get.shit.done at work!) has been that Amy Adams takes the Fashion Queen crown at this year’s GG with her gorgeous lavender gown. And the older ladies have been killing it! Cindy Crawford, Helen Mirren, CZJ? Looking totally stunning and showing the younger stars just how it’s done when it comes to working a red carpet look. Who says you can’t age gracefully?

And the Entourage crew coming early to the GG to film a scene for their upcoming movie? I have to admit, I’ve never actually watched an episode of Entourage in my life, just bits and pieces here and there. I don’t know, it’s never really bit me, but J is a total Entourage fan and now he’s making me sit down and watch the entire series with him ahead of the movie! We’ve watched two episodes so far last night. I probably need to watch a few more to get into it, but I have to admit, I can kind of see myself getting into it. Watch this space!

In the meantime, here’s a recipe to ease you in the the New Year. Quick and easy fried rice!

This recipe came together really easily one night when J sort of hijacked my plans for making a chicken and broccoli stir fry (I was insisting we did a home cooked meal as we’ve mainly been eating out – and unhealthily! – for Christmas and New Year) and suggesting we turn it into fried rice. I don’t often cook fried rice but I was amazed at how quickly it came together – we had most of the ingredients like eggs, rice, spring onions and a frozen veggie mix – in the kitchen anyway. I always view fried rice as a kind of unhealthy dish but as long as you don’t drown it in oil and serve it with a massive side of broccoli, which was what I did, it can be pretty darn healthy too!

Easy Fried Rice

Ingredients:

  • Four chicken thighs, washed and chopped into bite-sized pieces
  • One to two cloves of garlic, crushed
  • One and a half cups of frozen veggie mix, thawed (we used the good old corn, peas and capsicum mix)
  • A handful of spring onions, trimmed and sliced
  • One egg
  • One cup of rice
  • Soy sauce
  • Oyster sauce
  • Chili flakes

Directions:

Wash the rice and cook according to directions. While rice is cooking, heat a little oil in a large pan. Add the garlic to the pan and cook until fragrant. Add the chicken and let cook until chicken is browned. Stir in a couple of spoonfuls of soy sauce and a dash of oyster sauce and stir-fry until chicken is thoroughly cooked through. Remove pan from heat and transfer chicken onto a plate.

Return pan to heat and lower heat. Crack the egg onto the pan and fry until egg is golden-brown and white. Transfer egg to a plate and return pan to the heat once again.

Add another tablespoon of oil to the pan. Add the rice, chicken and veggie mix to the pan and stir to combine well. Slice or shred your egg into little pieces and add to the pan, stirring well. Season to taste with soy sauce and chilli flakes.

Divide fried rice onto plates and garnish with spring onions. Serve with a great big side of broccoli and enjoy!
