Chicken Broccoli Penne Pasta

This recipe combines some of my favourite foods – broccoli, pasta and chicken – in one fantastic smorgasbord of yumminess! Protein, vegetables and carbs all in one dish – what more could you ask for?

I’ve said it before and I’ll say it again: broccoli ranks amongst my top favourite vegetables. I just can’t get enough of it! Stir-fried with oyster sauce, steamed, simmered quickly in boiling water, roasted with olive oil, cracked pepper and a lil’ sea salt, baked in a quiche, there is really no way to ruin broccoli. And it’s packed full of nutrients as well, being rich in Vitamins A, K and C, iron, zinc, fibre, potassium and folate. It’s thought eating lots of broccoli can help reduce the risks of some cancers as well as improve eye health and support skin repair. So go on, eat as much of this yummy veggie as you want and feel virtuous while doing so! 🙂

Well, if I had a choice of what kind of foods I could bring, I would probably say I’d bring these three ingredients with me – pasta, chicken and broccoli. So I guess you could call this my Desert Island Recipe! What three ingredients would you bring with you if you were marooned on a desert island?

Chicken Broccoli Penne Pasta:


One pack penne pasta (I used the entire pack and ended up with a huge pan of pasta that lasted us well over three days)
One jar Leggos pesto sauce (use any pesto you prefer)
One tray of pre-chopped chicken (I’m lazy so I go straight for the pre-chopped! But if your grocer doesn’t offer this, opt to buy two chicken breasts instead and dice it yourself at home)
Two heads of broccoli, washed and chopped into medium-sized florets
One-third of a ball of mozzarella cheese, cut into small cubes
A couple of handfuls of fresh basil leaves


Prepare pasta according to package directions. Drain and set aside.

While pasta is cooking, heat a little oil in a large pan. Add chicken and cook on medium to high heat, stirring often, until chicken is browned.

Add broccoli florets to the pan. Lower heat to medium and continue to cook, stirring often, until meat is cooked through and broccoli is tender.

Turn the heat down to low and add the pasta and sauce, stirring well to mix thoroughly.

Serve garnished with mozzarella and basil. Enjoy!
